These buttery pan fried mushrooms and beans are tossed with zesty lemon, aromatic garlic and tangy parmesan cheese.

This is a quick and easy side to accompany a protein of your choice, full of fats and flavor!

Ingredients

  • 4 medium mushrooms
  • 3 ½ ounce green beans
  • 1 ½ tablespoon unsalted butter
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon peel or zest raw
  • 1 clove garlic
  • 1 tablespoon, grated parmesan cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the green beans to a pan of boiling water and simmer for 3-4 minutes until crisp and tender. Drain completely and set aside to steam dry.
  2. Melt the butter in a skillet over a medium heat. Thinly slice the mushrooms and crush the garlic. Add to the pan along with the beans, lemon juice, lemon zest, salt and pepper. Stir well to combine.
  3. Sauté for 4-5 minutes or until the mushrooms are cooked through and golden. Remove from the heat and sprinkle over the grated Parmesan and toss to combine.
