This cauliflower mash is delicious! It’s topped with creamy, stringy cheese and a dollop of fresh sour cream and fresh chives.

Ingredients

  • 1 pound cauliflower rice
  • 2 ounce cream cheese
  • ¼ cup, grated parmesan cheese
  • ¼ teaspoon coarse kosher salt by morton
  • ½ cup, shredded queso chihuahua (chihuahua cheese)
  • 1 tablespoon sour cream
  • 1 tablespoon chives

Instructions

  1. Preheat an oven to 425 F. Microwave the cauliflower rice for about 5 minutes until warm and kernels separated. Place the rice, cream cheese, parmesan and salt into a food processor and blend until mixture is nice and creamy.
  2. Place in an oven safe bowl and spread smooth.
  3. Top with cheese.
  4. Bake for ~10 minutes until cheese is melted and edges are turning brown.
  5. Top with cold sour cream and fresh chopped chives. Serve immediately!
