These quick and easy noodles are rich with curry spices, sweet shallot and aromatic garlic, cooked until perfectly tender.

These make a great side dish to a protein of your choice served with a scattering of fresh cilantro.

Ingredients

  • 4 ½ cup cabbage, green, raw
  • 2 teaspoon lime juice, fresh
  • 1 ½ tablespoon curry powder
  • 1 clove garlic
  • 1 tablespoon, chopped shallot
  • 1 tablespoon coconut oil
  • ¼ cup vegetable broth, bouillon or consomme

Instructions

  1. Thinly slice the cabbage into ribbons, discarding any tough core.
  2. Heat the coconut oil in a skillet over a low/medium heat. Thinly slice the garlic and add to the skillet along with the shallot. Sweat gently for a minute or two until tender.
  3. Add the cabbage noodles, curry powder and lime juice. Stir well and pan fry for a couple of minutes.
  4. Add the stock and simmer over medium heat stirring regularly, until all the stock has evaporated and the cabbage is tender.
