These tender curried green beans are complemented perfectly by aromatic spices and creamy coconut milk.

Simple to pull together yet packed with flavor, these green beans are the perfect accompaniment to grilled meats or our keto tandoori chicken.

Ingredients

  • 8 ounce green beans (string beans), cooked from fresh
  • 1 clove garlic
  • ½ teaspoon ginger, ground
  • 1 tablespoon coconut oil
  • 1 tablespoon raw blanched slivered almonds by trader joe's
  • ⅓ cup coconut milk
  • ½ teaspoon curry powder
  • ¼ teaspoon turmeric, ground
  • ¼ teaspoon cumin, ground
  • ¼ teaspoon cinnamon, ground
  • ¼ cup, chopped red onion
  • ⅛ teaspoon black pepper

Instructions

  1. Finely dice the onion and thinly slice the garlic. Heat the coconut oil in a pan over a low/medium heat and fry the onion and garlic until tender.
  2. Add the curry powder, ginger, turmeric, cumin and cinnamon to the pan. Swirl the pan, coating the onion and garlic in the seasoning, warming the spices through.
  3. Add the beans to the pan and season with black pepper. Toss the beans in the spices and oil.
  4. Add the coconut milk to the pan and bring to a gentle simmer, cooking the beans until the milk has reduced and the beans are tender – about 5-6 minutes.
  5. Scatter with flaked almonds to serve.
