This simple keto salad is rich with tangy feta cheese, tender baby spinach, tart cranberries and crunchy pine nuts, drizzled with a sweet balsamic dressing.
This makes for a great side salad with roasted chicken or lamb.
Ingredients
- 3 tablespoon feta cheese
- 2 cup baby spinach
- 1 tablespoon, whole pieces pine nuts
- 1 tablespoon reduced sugar craisin dried cranberries by ocean spray
- 1 tablespoon olive oil
- ½ tablespoon balsamic vinegar
- ¼ cup, whole pieces basil, fresh
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the pine nuts to a dry skillet over a low/medium heat. Toast gently for two to three minutes until lightly golden.
- Add the spinach and basil to a large serving bowl. Finely chop the cranberries and add to the bowl. Crumble over the feta and pine nuts. Season with salt and pepper and toss to combine.
- Whisk together the balsamic and olive oil and drizzle over the salad. Stand for 10 minutes to allow the spinach to soften in the dressing a little before serving.
