These tender green beans are cooked in a tomato sauce with salty olives and aromatic oregano, then topped with tangy feta cheese to serve.

These are a great side to Mediterranean dishes.

Ingredients

  • 6 medium black olives
  • 3 ½ ounce green beans (string beans), raw
  • 2 tablespoon feta cheese
  • 1 tablespoon olive oil
  • 1 clove garlic, fresh
  • 1 teaspoon oregano, ground
  • ¼ cup tomato sauce
  • ¼ cup vegetable broth, bouillon or consomme

Instructions

  1. Heat the olive oil in a saucepan over a low/medium heat. Thinly slice the garlic and add to the pan, sweating gently until tender.
  2. Thinly slice the olives and add to the pan with the passata, stock and oregano. Stir to combine and bring to a gentle boil.
  3. Add the green beans and stir well. Simmer for 5-6 minutes until tender and the sauce has reduced.
  4. Scatter the beans with crumbled feta to serve.
