These tasty greens beans are cooked until tender then sautéed with earthy mushrooms, sweet cherry tomatoes and aromatic seasonings.

This is a versatile side dish, perfect served with meat, fish or a vegetarian or vegan main.

Ingredients

  • 5 ounce green beans (string beans), raw
  • 4 cherry cherry tomato
  • 2 medium mushrooms
  • 1 clove garlic
  • 1 teaspoon italian seasoning
  • 1 tablespoon white onion
  • 1 tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the green beans to a small saucepan of boiling water. Add a little pinch of salt and simmer for 3-4 minutes until fork tender. Drain completely and steam dry.
  2. Whilst the beans are simmering, crush the garlic, finely dice the tomatoes and thinly slice the mushrooms. Heat the olive oil in a skillet over a medium heat. Add the onion, garlic, mushrooms, tomatoes, and Italian seasoning. Stir well to combine and sweat gently for 2-3 minutes until tender and fragrant.
  3. Add the green beans to the skillet, season with a little salt and pepper and stir well. Cook for a minute or two more until hot through.
