Chicken salad is a classic side dish! They can do more than just complement a barbecue, too. This chicken salad can be served as a side to a heavy meal, as a salad topper, or even enjoy it as a snack with Carb Manager Bacon Chips, Cloud Bread, or Cheese Crackers! This recipe is also especially light and fluffy with just a little tang to it.
Ingredients
- 6 ½ ounce chicken breast, skin removed before eating
- 2 ½ ounce pickles
- 1 tbsp chopped raw scallions or green onions
- 1 teaspoon dijon mustard
- ¼ cup mayo
- ½ teaspoon lemon juice
- ¼ teaspoon celery salt
- 0.12 teaspoon black pepper
- 1 teaspoon, whole pieces dill weed, fresh
Instructions
- Prepare the cooked chicken by removing any unwanted fat. Then, us a knife or kitchen scissors to finely chop and shred the chicken into small pieces. This chicken salad is not intended to be especially chunky.
- Combine the cooked chicken with all the other remaining ingredients in a bowl. For the pickles and green onion, try to dice these items in a similar fashion as the chicken for a consistent side dish.
- Serve cold!
