These Mediterranean inspired zucchini are full of fresh flavors and make for a great salad or bbq side.

Perfect served alongside grilled meats or kebabs.

Ingredients

  • 1 medium zucchini
  • ½ each – juice from one lemon lemon juice
  • 2 tablespoon olive oil
  • 2 tablespoon, crumbled feta cheese
  • 2 tablespoon, whole pieces pine nuts
  • 2 tablespoon peppermint, fresh
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Peel the zucchini and carefully slice into 6 strips lengthways about 1/4 inch thick.
  2. Brush the zucchini all over with the oil and lemon juice and season with salt and pepper.
  3. Heat a griddle pan over a medium / high heat and add the coated zucchini strips. Cook for 2-3 minutes on each side until tender and charred.
  4. To serve, crumble the feta over the zucchini and scatter with pine nuts, chopped fresh mint and a drizzle of olive oil.
