These spicy green beans are tossed in a lemon and harissa oil and topped with crunchy toasted almonds and aromatic parsley.

These are a great accompaniment to chicken or salmon.

Ingredients

  • 3 ½ ounce green beans (string beans), raw
  • 2 teaspoon lemon juice
  • 2 teaspoon ingredients harissa paste by tesco
  • 1 ½ tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon parsley, fresh
  • 1 tablespoon, sliced almonds, raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender. Drain completely.
  2. Whilst the beans are cooking, add the sliced almonds to a dry skillet over a low/medium heat. Toast for 3-4 minutes until lightly golden. Set aside.
  3. Add the harissa paste, 1 tablespoon of olive oil, lemon juice, salt and pepper to a small bowl. Mix well to combine.
  4. Heat the remaining oil in a large skillet over a low heat. Thinly slice the garlic and sweat until tender. Add the green beans and toss to combine.
  5. Increase the heat to medium and add the harissa oil, toss the beans in the oil and stir fry for a minute or two until hot through.
  6. Top the spicy beans with the sliced almonds and fresh parsley to serve.
