Oh, to miss the days of steamy, loaded baked potatoes. The next best thing is a heaping dish full of loaded cauliflower mash! You’ll need a full prepared recipe of cauliflower mash to make this. Adding a pile of crunchy bacon and gooey cheese will make this side dish absolutely irresistible. You may forget about your main course altogether!

Ingredients

  • 4 portions low carb cauliflower mash
  • 2 medium slice (yield after cooking) bacon
  • ½ cup, shredded shredded cheddar cheese
  • 1 tbsp chopped chives raw

Instructions

  1. Preheat an oven to 375 degrees. Cook the bacon in a pan on medium-high heat until the bacon is very crispy. Set the bacon aside to cool and chop it into small pieces.
  2. Fill an oven-safe baking dish with prepared cauliflower mash. Top it with the chopped bacon and shredded cheddar cheese.
  3. Bake the loaded cauliflower mash for 20-25 minutes, or until it’s heated through and the cheese has melted. You may also leave it under a hot broiler for 5 minutes to brown the cheese. Top with chopped chives for serving!
