These sweet and zesty radishes are coated in maple flavored syrup, lemon and fresh thyme before being baked until golden and caramelized.

These are a great side option to Sunday lunch or roasted meats.

Ingredients

  • 8 ounce radish, raw
  • 2 teaspoon, chopped thyme, fresh
  • 1 tablespoon maple flavored syrup by lakanto
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon peel or zest raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Cut the ends of the radishes and slice any larger radishes in half. Arrange across a shallow oven tray.
  3. Whisk together the syrup, oil, lemon juice, zest, thyme, salt and pepper. Drizzle the oil mixture over the radishes and use your hands to rub the seasonings all over the vegetables.
  4. Transfer to the oven to bake for 18-20 minutes or until tender and caramelized.
