This Mexican rice will be the perfect pairing to any main dish! Cauliflower rice is sauteed with onions, garlic powder, tomato sauce, cumin, and chili powder!

Ingredients

  • 2 teaspoon avocado oil
  • ⅓ cup white onion
  • 12 ounce asda frozen cauliflower rice
  • ⅓ cup tomato sauce
  • ½ teaspoon coarse kosher salt by morton
  • ½ teaspoon garlic powder
  • ⅓ cup green bell pepper
  • ½ teaspoon cumin, ground
  • ¼ teaspoon chili powder

Instructions

  1. Preheat a medium-sized nonstick skillet over medium-high heat. Add in the oil and then the onions. Saute for a couple minutes until translucent.
  2. Add the frozen cauliflower and cook for 1-2 minutes.
  3. Add the tomato sauce and give it a good stir to incorporate the sauce.
  4. Add diced green bell pepper, salt and garlic powder.
  5. Add the cumin and chili powder. Stir well and serve immediately!
