These keto onion bhajis are packed with tender sweet onion, aromatic spices, coated in a crisp almond batter and pan fried until golden.

These make for a great side to keto curries or as a snack with raita dipping sauce.

Ingredients

  • 1 2 cups olive oil for frying
  • 1 medium – 2 1/2" diameter white onion
  • 1 teaspoon lemon juice
  • 1 small raw egg
  • 1 teaspoon cumin, ground
  • 1 teaspoon ground coriander
  • 2 ounce food cupboard home baking almonds ground by sainsbury's
  • ½ teaspoon baking soda
  • ½ teaspoon turmeric, ground
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the ground almonds, baking soda, turmeric, cumin, coriander, salt, pepper and lemon juice to a food processor. Pulse to combine.
  2. Add the egg and blend to a smooth thick paste. Transfer to a mixing bowl.
  3. Finely slice the onion and add to the bowl with the batter. Stir well, so that the onion and batter are combined.
  4. Heat the oil in a small saucepan over a high heat. Once hot, scoop a tablespoon of the onion and batter mixture at a time and very carefully spoon into the pan. You should be able to fry 3 bhajis at a time. Cook for 1-2 minutes on each side until golden and crisp, then repeat with the remaining batter. Carefully transfer the cooked bhajis to a sheet of kitchen paper to soak up the excess oil.
