These buttery, soft and fluffy rolls are slathered with ghee and salted liberally with sea salt. They are the most wonderful addition to breakfast with cured meats or for a snack. Not to mention, they would be great with a nice side of roast beef or grilled chicken. It will be a recipe you will make time and time again.

What does Keto bread taste like?

Low carb and Keto bread as a soft texture with slight buttery notes from psyllium husk. In general, they have a light, airy texture due to the addition of egg. They form a nice crust that is reminiscent of bread. They are sturdy enough to use like bread without all the carbs.

Do you need to refrigerate Keto bread?

Due to a higher water activity of Keto breads, they need to be refrigerated after baking or frozen up to one month.

What other toppings can I add?

Other unique toppings for these pull apart buns include, Maldon salt, furikake seasoning, everything bagel seasoning or cinnamon and sugar.

Ingredients

  • 1 ¼ cup almond flour
  • 5 tablespoon psyllium husk powder soluble fiber by now
  • 1 teaspoon coarse kosher salt by morton
  • 1 teaspoon baking powder
  • 2 teaspoon apple cider vinegar
  • 1 cup boiling water
  • 3 large raw egg
  • 1 tablespoon ghee
  • 2 teaspoon ghee
  • 1.12 teaspoon himalayan pink salt crystals by trader joe's

Instructions

  1. Preheat an oven to 325 F. Combine all dry ingredients together in the bowl of a stand mixer using a paddle attachment.
  2. Add vinegar and boiling water. Then mix well in the stand mixer starting on low speed and then turning it to medium speed. Mix for 45 seconds to 1 minute.
  3. Add the eggs and 1 tbsp ghee and mix well for another 1-2 minutes.
  4. Divide the dough into eight parts. Wetting your hands between each piece of dough, make them into rolls. Wetting your hands before rolling each piece of dough will help it from sticking to your hands and results in a very smooth surface that looks like bread. Spray an 8” cake round cake pan with nonstick cooking spray and then evenly arrange rolls into the pan. Brush the tops of the rolls with half of melted ghee.
  5. Bake in the oven for at least 60 minutes (mine took 70 minutes). They tend to look baked on the outside, but if they are underbaked on the inside will collapse. Be sure to err on the side of caution and give them extra time if you are unsure. Brush with remaining melted ghee and sprinkle with himalayan salt.
