This Keto Pico de Gallo includes all the classic flavors of the traditional salsa with a splash of olive oil for a dose of healthy fats.
Perfect for topping fajitas, steaks or with our keto butterflied lime chicken and pico de gallo.
Ingredients
- 2 medium – 2 3/5" diameter tomato raw (includes cherry, grape, roma)
- 2 teaspoon lime juice, fresh
- 1 tablespoon olive oil
- ½ small red onion
- ½ cup, chopped cilantro
- ¼ each – approx 4" – 6" long hot chili peppers, red, raw
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Roughly dice the tomatoes and onion and add to a mixing bowl.
- De-seed and finely chop the chilli and roughly chop the cilantro. Add to the bowl with the tomato and onion.
- Season and drizzle over the lime juice and olive oil. Toss well to combine.
