Can I Use a Different Meat?

We have used ground pork for this Keto dinner recipe, but if preferred, you can swap the pork for an alternative ground meat. Turkey and chicken would both make great substitutions. If using turkey or chicken, opt for ground thigh meat as this provides more fats and flavor. This will also prevent the meat from drying out when cooking. Please be sure to adjust cooking times and macros as needed for different meats.

How Do I Make Cauliflower Rice?

Cauliflower rice is a simple to prepare side, perfect for complementing your favorite Keto dishes. You can buy cauliflower rice ready-made in many grocery stores in either the fresh or frozen section. Alternatively, you can prepare the rice yourself by simply shredding cauliflower florets with a box grater to create grain-sized pieces or by pulsing florets in a food processor.

Ingredients

  • 9 oz ground pork
  • 4 medium – 3/4" to 1" diameter radish, raw
  • ½ medium – 2 1/2" diameter x 2 3/4" yellow pepper
  • 2 medium – 4 1/8" long scallions
  • 2 medium raw egg
  • 1 ½ cup cauliflower, cooked from fresh
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoon lime juice, fresh
  • 2 tablespoon tamari sauce
  • 2 teaspoon sesame oil

Instructions

  1. Heat the olive oil in a skillet over a medium/high heat. Add the ground pork. Cook the pork until browned all over.
  2. While the pork is browning, dice the bell pepper and scallions and thinly slice the radishes. Once the pork has browned, move it to one side in the skillet. Add the vegetables to the empty side. Stir fry for a minute. You can add a splash more oil if the pan is too dry.
  3. Add the cauliflower rice to the skillet. Add the tamari sauce, sesame oil and lime juice. Stir well to combine. Stir fry for 2-3 minutes more until the rice and vegetables are tender.
  4. Crack the eggs into a bowl. Whisk until smooth. Make a well in the center of the rice and pork mixture. Pour the beaten egg into the center of the rice. Allow the egg to settle for a moment, then scramble into the rice and pork. Cook the egg through. Serve the dish hot with your preferred Keto toppings and sides.
