These tasty little green bean bundles are wrapped in prosciutto and baked with lemon and garlic until crisp and golden.

These are a great side option for roasted chicken or even served as a starter or party appetizer!

Ingredients

  • 24 each – 4" long green beans (string beans), raw
  • 4 slice prosciutto
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 teaspoon lemon peel or zest raw
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Add the green beans to a pan of boiling water and simmer for 4-5 minutes until tender, then drain completely.
  3. Divide the green beans into four bundles of six beans and wrap each tightly with a strip of prosciutto.
  4. Arrange the bundles across the lined oven tray and season with black pepper. Mince the garlic and scatter over the parcels along with the lemon zest. Drizzle with the olive oil.
  5. Transfer to the oven to bake for 12-15 minutes until the prosciutto is crisp and golden.
