This sweet and sticky onion relish is a great side for the festive season. With a hint of ginger and cranberries, this relish is the perfect topping to your cheese and keto crackers!

Ingredients

  • 1 small red onion
  • 1 tablespoon maple flavored syrup by lakanto
  • 1 tablespoon balsamic vinegar
  • 1 slice – 1" diameter ginger root, raw
  • 1 tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ¼ cup, whole pieces cranberries, fresh
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon cloves, ground

Instructions

  1. Finely slice the onion and grate the ginger. Add to a small pan over a high heat along with the cranberries, syrup, vinegar, olive oil, cloves, salt and pepper.
  2. Cook the mixture for a minute or two until the cranberries begins to burst and the onion softens.
  3. Reduce the heat to low and simmer gently for 15 minutes, stirring often, until you have a sticky relish. Leave to cool before serving.
