These Mediterranean inspired mushrooms are baked with fresh tomatoes, bell peppers, aromatic herbs and tangy cheese.

These make a great side for grilled fish or roasted chicken.

Ingredients

  • 4 large mushrooms
  • 3 ½ ounce mozzarella cheese
  • 2 teaspoon, chopped thyme, fresh
  • 2 teaspoon, whole pieces basil, fresh
  • 1 clove garlic
  • 1 teaspoon lemon juice
  • 1 medium – 2 3/5" diameter tomato
  • 1 tablespoon olive oil
  • 1 tablespoon, grated parmesan cheese
  • ½ small red bell peppers, raw
  • ½ small orange bell pepper
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Slice the peppers into half inch strips and cut the tomatoes into wedges. Slice the mushrooms into one inch chunks and add to an oven proof dish.
  3. Crush the garlic over the vegetables and scatter the fresh herbs, salt and pepper. Drizzle with the lemon juice and olive oil and toss to combine.
  4. Scatter over the Parmesan and tear over the mozzarella.
  5. Transfer to the oven for 18-20 minutes until the vegetables are tender and the cheese is melted and golden.
