These simple roasted veggies are tossed with smoky paprika and oven baked until tender and golden then tossed with oozy melted cheddar cheese.

This is a great side dish for families, perfect to get kids to enjoy their veggies!

Ingredients

  • 6 large – 1" to 1 1/4" diameter radish, raw
  • 2 teaspoon gourmet collection smoked paprika by mccormick
  • 1 ½ tablespoon olive oil
  • 1 cup flowerets broccoli florets raw
  • ½ cup, grated cheddar cheese
  • ½ large – 3" diameter x 3 3/4" red bell peppers, raw
  • ½ large – 3" diameter x 3 3/4" yellow bell peppers, raw
  • ½ large – 3" diameter x 3 3/4" orange bell pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Cut the broccoli into bite sized chunks, dice the pepper into thick strips and quarter the radishes. Add to an oven proof dish.
  3. Drizzle over the olive oil and sprinkle over the garlic powder, paprika, salt and pepper. Use your hands to rub the seasonings all over the vegetables.
  4. Transfer to the oven to bake for 20-22 minutes or until tender and slightly caramelized.
  5. Sprinkle over the cheese and toss to combine, serve warm.
