These creamy baked artichoke hearts are rich with tangy cheddar and parmesan cheese – the perfect accompaniment to roasted chicken or pork chops.
Canned or jarred artichoke hearts are ideal for this recipe and save on a lot of prep time!
Ingredients
- 10 ounce artichoke hearts or globe, canned in oil mixture
- 1 tablespoon olive oil
- 1 clove garlic
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- 2 teaspoon lemon juice
- ¼ cup, grated cheddar cheese
- ⅓ cup mayonnaise
- ¼ cup, grated parmesan cheese
Instructions
- Preheat the oven to 380 degrees Fahrenheit.
- Slice the artichoke hearts in half and add to a mixing bowl along with the minced garlic, olive oil, lemon juice, salt and pepper. Toss well to combine.
- Add the mayonnaise, cheddar cheese and parmesan to the bowl and stir together well, coating the artichokes.
- Transfer the mixture to a small baking dish and bake for 15 minutes until the cheese is golden brown and bubbling.
