This simple baked feta is combined with juicy tomatoes and aromatic scallions and roasted with oil and balsamic vinegar until caramelized.

This is a great side dish to a Mediterranean inspired meal.

Ingredients

  • 8 cherry cherry tomato
  • 5 ounce feta cheese
  • 2 teaspoon, chopped thyme, fresh
  • 1 teaspoon lemon peel or zest raw
  • ½ tablespoon balsamic vinegar
  • ½ tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper
  • 4 medium – 4 1/8" long scallions

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Break the feta into bite sized chunks and add to a small oven proof dish. Slice the ends from the scallions and remove any stringy outer leaves. Arrange in the oven dish along with the tomatoes.
  3. Scatter over the lemon zest, fresh thyme, salt and pepper.
  4. Drizzle over the olive oil and vinegar, coating the vegetables and cheese.
  5. Transfer to the oven to bake for 18-20 minutes or until the vegetables are tender.
