This cauliflower rice is packed with tender zucchini, aromatic scallions, oozy cheddar and crispy bacon.
This makes a great side to chicken or pork, or even on its own served with a side salad.
Ingredients
- 4 slice – 6" long bacon
- 2 small – 3" long scallions
- 1 cup zucchini
- 1 cup cauliflower rice
- 1 clove garlic
- 1 tablespoon olive oil
- 1 tablespoon parsley, fresh
- ½ cup, grated cheddar cheese
- ¼ teaspoon salt, sea salt
- â…› teaspoon black pepper
Instructions
- Roughly dice the bacon. Heat the oil in a skillet over a medium heat and add the bacon, cooking until crisp and golden. Remove from the pan with a slotted spoon and set aside.
- Dice the zucchini into 1/4 inch chunks, slice the scallions and crush the garlic. Add to the pan with the bacon fat and cook gently for a few minutes until tender and fragrant.
- Add the cauliflower rice to the pan along with a tablespoon of water. Season with salt and pepper and stir everything well to combine. Cook for 2-3 minutes until the cauliflower is hot through.
- Scatter the grated cheese over the rice to melt.
- Remove from the heat and scatter over the diced bacon and freshly chopped parsley to serve.
