This smoky egg mayo is loaded with flavor and texture from creamy avocado, sweet red bell pepper, a twist of lime and aromatic herbs and spices.

This is a great keto sandwich filler, addition to salads, or filling for celery stalks.

Ingredients

  • 2 medium hard boiled egg
  • 1 ½ tablespoon mayonnaise
  • 1 teaspoon lime juice, fresh
  • 1 tablespoon cilantro
  • 1 large scallions
  • 1 teaspoon gourmet collection smoked paprika by mccormick
  • ½ each avocado
  • ¼ medium – 2 1/2" diameter x 2 3/4" red bell peppers, raw
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Peel the eggs and roughly chop them. Add to a mixing bowl.
  2. Roughly chop the cilantro, dice the bell pepper and avocado and thinly slice the scallions. Add to the bowl with the chopped egg along with the paprika, garlic powder, salt and pepper. Stir well to combine.
  3. Add the mayonnaise and lime juice and stir well to coat. Refrigerate until ready to serve.
