This quick and easy egg mayo is loaded with flavor from tangy dill pickles, salty capers and sweet red onions.

This makes a great sandwich filler for lettuce cups or keto wraps or is perfect added to a salad.

Ingredients

  • 4 small – approx 2" long dill pickles
  • 2 medium hard boiled egg
  • 1 tablespoon red onion
  • 1 teaspoon capers
  • 1 teaspoon lemon juice
  • 1 tablespoon mayonnaise

Instructions

  1. Peel and roughly chop the eggs and add to a mixing bowl. Thinly slice the dill pickles and add to the bowl along with the capers, red onion and black pepper. Stir to combine.
  2. Add the mayonnaise and lemon juice and mix well, coating everything in the dressing. Refrigerate until ready to serve.
