This quick and easy egg mayo is loaded with flavor from tangy dill pickles, salty capers and sweet red onions.
This makes a great sandwich filler for lettuce cups or keto wraps or is perfect added to a salad.
Ingredients
- 4 small – approx 2" long dill pickles
- 2 medium hard boiled egg
- 1 tablespoon red onion
- 1 teaspoon capers
- 1 teaspoon lemon juice
- 1 tablespoon mayonnaise
Instructions
- Peel and roughly chop the eggs and add to a mixing bowl. Thinly slice the dill pickles and add to the bowl along with the capers, red onion and black pepper. Stir to combine.
- Add the mayonnaise and lemon juice and mix well, coating everything in the dressing. Refrigerate until ready to serve.
