Ingredients

  • 3 link – each 0.7 ounce breakfast sausage
  • 3 tablespoon cream cheese spread
  • 1 teaspoon sage, dried
  • 1 tablespoon olive oil
  • 1 cup chicken broth, bouillon or consomme, ready-to-serve can
  • ½ cup heavy cream
  • ¼ teaspoon nutmeg ground

Instructions

  1. Heat the olive oil in a large skillet over a medium/high heat. Carefully squeeze the sausage meat from its casing and into the skillet. Add the dried sage. Cook the sausage meat through until it is browned all over. As the meat cooks, break it up into small chunks with a wooden spoon, stirring to combine with the sage.
  2. Add the cream cheese spread to the skillet. Stir continuously until melted down. Stir the melted cream cheese and sausage meat together to combine.
  3. Add the chicken stock to the skillet. Stir well, incorporating the stock with the melted cream cheese. You may add a little salt and pepper if desired, depending on how seasoned your stock is. Bring to a boil and simmer for a minute to reduce.
  4. Add the heavy cream to the skillet along with the nutmeg. Stir well to combine. Simmer the sauce for 3-4 minutes or until reduced, piping hot through and well thickened. The sauce should be thick and creamy. Taste and adjust seasonings if required.
