If you haven’t gotten your greens in for the day, this spinach pie is the perfect side for loading up on your B vitamins. Spinach is very low in carbohydrates and is one of the best keto vegetables you can eat! A layer of melted cheese is an added bonus! Spinach pie will complement just about any main dish you could think of.

Ingredients

  • 2 ½ ounce spinach
  • ¼ cup ricotta cheese
  • 2 large raw egg
  • 1 teaspoon salt
  • 1 ½ teaspoon black pepper
  • 1 cup, shredded parmesan cheese

Instructions

  1. Preheat the oven to 375 degrees. In a bowl, combine the chopped spinach with all the remaining ingredients except for the parmesan.
  2. Spray a shallow baking dish with pan spray, and pour the mixture into the dish. Spread the shredded parmesan cheese over the top, making sure the filling is completely covered.
  3. Bake the dish, uncovered, for about 25 minutes or until the spinach is soft and wilted and the cheese is golden brown.
  4. Serve hot with your main dish!
