These simple stir fried peppers are cooked until soft and tender with salty capers and olives, aromatic garlic and a little twist of lemon.

This is a great topping for grilled meats or fish or added to salads.

Ingredients

  • 8 medium black olives
  • 1 ½ tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon, whole pieces capers
  • 1 teaspoon lemon peel or zest raw
  • 1 medium – 2 1/2" diameter x 2 3/4" yellow bell peppers, raw
  • ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, raw

Instructions

  1. Slice the bell peppers into thin strips. Heat the oil in a skillet over a medium heat and add the pepper strips, cooking for 3-4 minutes to soften.
  2. Crush the garlic, slice the olives and roughly chop the capers. Add to the pan along with the lemon zest and stir well to combine. Cook for a further 2-3 minutes until the peppers are soft and the garlic is tender.
