This keto rice is packed with aromatic herbs and spices – perfect to accompany meat or vegetable curries.

As well as serving hot with curry, this would also work well cold as part of a rice salad.

Ingredients

  • 2 cup cauliflower rice
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon white onion
  • 1 teaspoon cumin, seed
  • 1 slice – 1" diameter ginger root, raw
  • 1 teaspoon turmeric, ground
  • 1 tablespoon coriander leaf, fresh
  • 1 teaspoon coriander leaf, dried
  • ¼ teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Heat a tablespoon of olive oil in a pan over a low/medium heat. Mince the garlic and grate the ginger. Add to the pan along with the cumin seeds and onion. Sweat gently until tender and fragrant. Add the cauliflower rice, turmeric, coriander, salt and pepper. Stir well to combine.
  2. Cook for a further 2-3 minutes until the rice is tender and scatter with fresh cilantro to serve.
