Air Fryer Pepperoni Hamburger Mushroom Olive Bowls

Pizza bowls are a great way to make everyone in the family (Keto and non-Keto) happy! Stainless steel bowls are filled with sauteed ground beef, which is topped with mushrooms (that have been sauteed in the beef fat), diced green bell pepper, diced white onion, and a low carb pizza sauce. Once all of those ingredients are in the bowl, it is topped with shredded mozzarella cheese, black olives, and pepperoni. The bowls are cooked in the air fryer for a few minutes until the pepperoni is crisp and the cheese is melted and browned. They are delicious and perfect for weeknight dinners.

Why do I need to use 80/20 beef?

I like to use 80/20 beef to add healthy fats to your Keto diet. After browning the meat, the residual fat is best used to saute the sliced mushrooms in, and the result is delicious.

Do I have to use all the toppings?

No, the best thing about pizza bowls is that you can add or subtract any of the toppings to suit your taste.

Can I prep these bowls ahead of time?

Yes! Feel free to brown the meat and chop the vegetables ahead of time, so they are ready to be assembled into bowls. Alternatively, you can have the bowls made and then cook them in the air fryer when ready to eat. Either way, you will need to lower the air fryer’s temperature and add a couple of extra minutes to allow the food to come up to temperature. With the recipe below, the ingredients start from a hotter state, so they will take less time to cook.

Ingredients

  • 1 lb beef ground 80% lean 20% fat or hamburger patty raw
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon garlic powder
  • 4 oz mushrooms
  • ⅛ teaspoon coarse kosher salt
  • 4 tbsp, chopped green pepper
  • 4 tbsp, chopped onion
  • ½ cup pizza sauce
  • 20 slice – each 0.1 ounce pepperoni
  • 4 tablespoon olives black canned small to extra large
  • 1 cup, shredded mozzarella cheese, whole milk

Instructions

  1. In a small nonstick skillet, add the ground beef. Heat the ground beef over medium-high heat and brown the meat until thoroughly cooked. Add ½ tsp kosher salt to the beef and stir well. Use a slotted spoon to remove the meat to a separate bowl. Leave the residual fat at the bottom of the pan.
  2. Add the sliced mushrooms and add ⅛ tsp kosher salt. Cook for 2 minutes or so, stirring constantly until the mushrooms are browned.
  3. Prep all the ingredients by dicing the onions and green bell peppers. Have the other ingredients ready to go into the bowls.
  4. Then divide the ground beef between the four 2 cup sized stainless steel bowls (or other ovenproof bowls). Divide the mushrooms between the bowls on top of the beef. Add 1 tbsp each of diced bell pepper and white onion to each bowl.
  5. Top each bowl with 2 tbsp pizza sauce to each bowl (be sure to find a no sugar added kind).
  6. Top each bowl with ¼ cup of shredded mozzarella cheese, 1 tbsp black olives, and five pepperoni slices.
  7. Set an air fryer to 400 F and place one bowl inside 4 minutes. Add more time for more browning.
