These avocado boats are loaded with a simple, refreshing salsa, sour cream and shredded chicken.
A simple yet tasty snack that is quick and easy to prepare between meals.
Ingredients
- ½ ounce rotisserie chicken
- 1 each avocado
- 1 tablespoon, chopped tomato
- 1 tablespoon, chopped cucumber
- 1 medium – 4 1/8" long scallions
- 1 tablespoon, chopped cilantro
- 1 tablespoon sour cream
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Slice the avocado in half, lengthways and remove the stone.
- Finely dice the scallion and add to a mixing bowl along with the tomato, cilantro and cucumber. Season with salt and pepper and stir to combine.
- Divide the sour cream evenly between the avocado halves.
- Divide the salsa between the avocado halves.
- Shred the chicken and arrange on top of the salsa to serve.
