This fruity spread walks a fine line between sweet and savory. Tangy goat cheese is paired with buttery mascarpone as the base of the spread. A squirt of lemon juice and fresh blueberries turn this in an almost-dessert snack.

Serve cold as a thick spread on a keto bagel or serve warm as a dip with parmesan crisps!

Ingredients

  • 4 ounce goat cheese, soft
  • 2 ounce mascarpone
  • 2 teaspoon lemon juice
  • ⅛ teaspoon salt
  • 1 ounce blueberries

Instructions

  1. In a bowl, microwave the goat and mascarpone cheese for 20-30 seconds. The mascarpone will melt to a buttery liquid and the goat cheese will become soft.
  2. Transfer the cheeses to a food processor and pulse with the lemon juice and salt until you have a smooth blend.
  3. Add the blueberries to your spread. You may either pulse the blueberries in the food processor for a more blended dip. You can also gently smash the blueberries and fold them into your spread with a spatula to keep whole pieces.
