This simple but tasty stack has the classic caprese flavors of tomato, basil and mozzarella, sandwiched between slices of cooling cucumber.

This is a great snack option or party appetizer, or two stacks would make a light lunch served with salad.

Ingredients

  • 4 leaf basil, fresh
  • 2 ½ ounce mozzarella cheese
  • 2 teaspoon olive oil
  • 1 medium – 2 3/5" diameter tomato
  • ¼ large – 8 1/4" long cucumber
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the cucumber, mozzarella and tomato into 1/4 inch discs. Season with salt and pepper.
  2. Place the mozzarella slices onto four of the cucumber discs and top each with a basil leaf.
  3. Arrange the tomato slices across each stack.
  4. Top each stack with a slice of cucumber and a little drizzle of olive oil. Optionally secure with a toothpick to serve.
