These avocado boats are loaded with a sharp mustard and creamy mayonnaise, shredded chicken and diced radishes.
These make a tasty and filling snack in between meals and are a great way to use up any left over cooked chicken!
Ingredients
- 1 each avocado
- 1 tablespoon mayonnaise
- ½ teaspoon mustard
- 1 small radish
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- 1 oz rotisserie chicken breast meat only skinless
Instructions
- Slice the avocado in half, lengthways and remove the stone.
- Finely dice the radish and add to a mixing bowl, along with the mayonnaise and mustard. Stir well to combine.
- Roughly shred the chicken and add to the mixing bowl, then season with salt and pepper. Mix well to combine.
- To serve, divide the chicken mixture evenly between the two avocado halves.
