Turn your favorite salad into a keto snack! The protein and carbs are slimmed down while you still get the natural fats from the cheese and egg. A dollop of caesar dressing adds that tangy, peppery zest to your eggs!

Ingredients

  • 3 ½ ounce boneless skinless chicken breast
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon garlic powder
  • 2 teaspoon olive oil
  • ½ ounce parmesan cheese
  • ½ ounce romaine lettuce
  • 4 large boiled eggs
  • 2 teaspoon caesar dressing

Instructions

  1. Butterfly a small chicken breast and season it with the salt, pepper, onion powder, and garlic powder. Heat the olive oil in a small pan over medium heat and place in the chicken. Cook for up to 5 minutes per side – until the chicken is cooked through and is golden brown on the outside. Set the chicken aside to cool.
  2. Slice a piece of parmesan for each egg bite you are making, as well as fresh romaine lettuce. Slice your hard boiled eggs in half, and cut the cooled chicken into equal pieces.
  3. Layer a slice of hard boiled egg with a ½ teaspoon of caesar dressing, a slice of parmesan, a piece of lettuce, and a piece of chicken, sandwiching it shut with the remaining egg half and a toothpick. At your discretion, you can add additional salt and pepper on top of each egg bite.
