These energy balls are full of very healthy, filling fats like coconut oil, almond butter and chia seeds which are an excellent source of omega-3 fatty acids. The energy balls are easy to pull together in under a half hour and are to be stored in the fridge until ready to eat.
Ingredients
- 2 tablespoon coconut oil
- 3 ounce almond butter
- 2 ½ teaspoon cacao powder raw chocolate powder certified organic by navitas
- 2 ounce almond flour
- 1 ounce coconut flour
- 5 drops sweet drops liquid stevia by sweet leaf
- ¼ teaspoon almond extract
- 2 ½ teaspoon, whole pieces chia seeds
- 2 tablespoon, shredded coconut, dried, shredded or flaked, unsweetened
Instructions
- In a large bowl, mix together the coconut oil, almond butter and cacao powder. Mix together well, heating it in the microwave if almond butter or coconut oil is too solid.
- Add in almond flour, coconut flour, stevia (about 1/2 teaspoon), extract, cacao powder and chia seeds.
- Mix well and place in the fridge until firm.
- Roll balls into 1 oz pieces, rolling them in coconut flakes and place in a single layer on a baking sheet and firm them in the fridge until ready to eat!
