These energy balls are full of very healthy, filling fats like coconut oil, almond butter and chia seeds which are an excellent source of omega-3 fatty acids. The energy balls are easy to pull together in under a half hour and are to be stored in the fridge until ready to eat.

Ingredients

  • 2 tablespoon coconut oil
  • 3 ounce almond butter
  • 2 ½ teaspoon cacao powder raw chocolate powder certified organic by navitas
  • 2 ounce almond flour
  • 1 ounce coconut flour
  • 5 drops sweet drops liquid stevia by sweet leaf
  • ¼ teaspoon almond extract
  • 2 ½ teaspoon, whole pieces chia seeds
  • 2 tablespoon, shredded coconut, dried, shredded or flaked, unsweetened

Instructions

  1. In a large bowl, mix together the coconut oil, almond butter and cacao powder. Mix together well, heating it in the microwave if almond butter or coconut oil is too solid.
  2. Add in almond flour, coconut flour, stevia (about 1/2 teaspoon), extract, cacao powder and chia seeds.
  3. Mix well and place in the fridge until firm.
  4. Roll balls into 1 oz pieces, rolling them in coconut flakes and place in a single layer on a baking sheet and firm them in the fridge until ready to eat!
