These simple zucchini roll ups are packed with fresh Mediterranean flavors of feta cheese, sundried tomatoes and fresh mint.

Perfect for snacking, adding to salads or as a party appetizer.

Ingredients

  • 4 piece sun-dried tomatoes, oil pack, drained
  • 3 tablespoon feta cheese
  • 1 small zucchini
  • 1 tablespoon peppermint, fresh
  • 1 teaspoon lemon peel or zest raw
  • 1 tablespoon olive oil
  • â…› teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Thinly slice the zucchini using a vegetable peeler so that you have 10 wide strips. Brush a griddle pan with half a tablespoon of olive oil and set over a high heat.
  2. Add the zucchini strips a few at a time to the griddle pan until char marks appear – this will only take a minute or so.
  3. Crumble the feta cheese into a small mixing bowl. Roughly chop the sundried tomatoes and mint, then add to the bowl along with the lemon zest, remaining olive oil, salt and pepper. Mix well to combine.
  4. Divide the feta mixture evenly between the 10 zucchini strips placing roughly a teaspoon full at each end.
  5. Roll the zucchini strips over and around the filling, rolling them into a tight tube. Serve immediately.
