This simple yet tasty halloumi snack is loaded with Mediterranean flavours from low carb veggies and aromatic herbs.

These are a great snack option for two people or a low carb lunch for one.

Ingredients

  • 4 ½ ounce haloumi cheese by papouis
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice, fresh
  • 1 clove garlic
  • 1 tablespoon basil, fresh
  • 1 teaspoon oregano, dried
  • ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, raw
  • ½ medium – 2 1/2" diameter x 2 3/4" yellow bell peppers, raw
  • ¼ medium zucchini
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the halloumi into two even slices. Slice the bell pepper pieces in half and the zucchini into two even discs. Arrange across a sheet pan.
  3. Mince the garlic and add to a small bowl along with the oil, basil, oregano, lemon juice, salt and pepper.
  4. Drizzle the marinade over the cheese and vegetables and rub all over using your hands.
  5. Transfer to the oven to bake for 15 minutes until the cheese is golden and the vegetables are tender.
  6. Arrange two pieces of halloumi on a clean surface and layer each with one of the orange bell pepper slices, followed by the zucchini, remaining halloumi and top with the red bell pepper slices to serve.
