Rich and creamy, this macadamia based butter is perfectly complemented by the tropical flavors of lime and coconut.

Ideal for adding to smoothies or spreading over keto toast!

Ingredients

  • 1 cup, whole pieces macadamia nuts, raw
  • 1 tablespoon coconut oil
  • ½ each – 2" diameter lime
  • ½ tablespoon xylitol by now
  • ⅛ teaspoon salt
  • 1 cup, shredded coconut, dried, shredded or flaked, unsweetened

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Arrange the macadamia nuts across the lined oven tray and transfer to the oven to bake for 7-8 minutes until fragrant.
  3. Transfer the toasted nuts to a food processor and blend to form a fine crumb
  4. Add the shredded coconut, lime, xylitol and sea salt and blend again until well combined.
  5. Add the coconut oil to the food processor and blend until you have a creamy, smooth nut butter – about 5-10 minutes. The butter will thicken on standing and once refrigerated.
