These simple melted cheese pots, combine 4 rich and indulgent cheeses and are oven baked to oozy perfection.

The perfect, snack, lunch or appetizer, these warm pots are ideal for dipping veggies, low carb crackers or keto bread.

The key to the perfect melted cheese is to not over bake, or the cheese will start to separate. Remove from the oven as soon as the cheese has melted and the center is gooey and wobbly!

Ingredients

  • 7 ounce cream cheese
  • 1 cup grated cheese
  • 1 tablespoon almond milk unsweetened by vitasoy
  • ⅓ cup, crumbled roquefort cheese
  • ¼ cup parmesan cheese
  • 1 clove garlic
  • 1 teaspoon thyme fresh
  • 1 teaspoon rosemary fresh
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 320 degrees Fahrenheit.
  2. Slice the garlic and add to a food processor with the cream cheese, grated cheddar, Roquefort, parmesan, thyme and rosemary.
  3. Add the almond milk, season with a little black pepper and blend to a completely smooth paste.
  4. Divide the blended cheese mixture evenly between two individual ramekins.
  5. Transfer to the oven to bake for 15-18 minutes, until the top is bubbling and the centre is gooey, warm and just melted – you can test this with a spoon.
  6. Serve immediately with veggie dippers, low carb bread or keto crackers.
