These sweet mocha almonds are coated in cocoa powder, coffee and sweet maple flavored syrup, then baked until golden and slightly caramelized.

These make a great snack between meals or post dinner treat.

Ingredients

  • 1 teaspoon instant coffee
  • 1 cup almonds, raw
  • ½ tablespoon cocoa powder, unsweetened
  • ½ tablespoon powdered erythritol
  • ½ tablespoon coconut oil
  • ½ tablespoon maple flavored syrup by lakanto

Instructions

  1. Preheat the oven to 275 degrees and line a shallow oven tray with baking paper.
  2. Add the cocoa powder to a food processor along with the erythritol and coffee. Blend to combine creating a fine powder.
  3. Add the almonds to a bowl. Melt the coconut oil and add to the bowl along with syrup and powdered flavorings. Stir well, coating the almonds in the seasonings.
  4. Arrange the almonds in an even layer across a shallow lined oven tray and bake for 20- 25 minutes or until golden and slightly caramelized, turning halfway through. Set aside to cool completely, breaking apart any clumps of caramelized nuts.
