These baked prosciutto cups are absolutely loaded with flavor from creamy mozzarella to aromatic pesto.
These make an ideal snack or New Years appetizer!
Ingredients
- 6 slice prosciutto
- 6 tablespoon, grated mozzarella cheese
- 4 piece sundried tomatoes
- 1 tablespoon, grated parmesan cheese
- 1 tablespoon, whole pieces pine nuts
- 1 tablespoon olive oil
- ½ clove garlic
- ⅓ cup, chopped basil
Instructions
- Preheat the oven to 360 degrees Fahrenheit and select a muffin tray.
- Arrange each slice of prosciutto in a muffin cup so that it covers the base and sides, forming a cup shape.
- To prepare the pesto, add the basil, garlic, Parmesan and olive oil to a food processor and blend to combine.
- Add half of the pine nuts and blend again until they are finely chopped.
- Add a tablespoon of mozzarella to each prosciutto cup.
- Roughly chop the sundried tomatoes and divide between the prosciutto cups.
- Drizzle each cup with pesto.
- Transfer to the oven to bake for 10 minutes or until the cheese is melted and the prosciutto is crisp.
- Set aside to cool and crisp further before serving.
