These peppers are stuffed with a simple tuna mayo with a hint of zesty lemon and aromatic chives.
These make for a great snack between meals, lunchbox filler or party appetizer.
Ingredients
- 18 1 pepper sweet & mild piquante pepper
- 2 ounce canned tuna
- 1 tablespoon mayonnaise
- 1 teaspoon, cut pieces chives, raw
- 1 teaspoon lemon peel or zest raw
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the tuna, mayonnaise, lemon zest, salt and pepper to a mixing bowl. Finely chop the chives and add to the bowl. Stir everything together well to combine.
- Use a spoon or small knife to carefully fill each pepper with the tuna mayonnaise. Cover and refrigerate until ready to serve.
