This simple stack is layered with classic pizza flavors of mozzarella, tomato, basil and olive, sandwiched between slices of crisp cucumber.

This is a great snack, party appetizer or even 2 stacks make a light lunch for one, served with salad.

Ingredients

  • 4 piece tomatoes sun dried or sundried
  • 4 leaf basil
  • 4 medium black olives
  • 2 ½ ounce mozzarella cheese
  • ¼ large – 8 1/4" long cucumber
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the cucumber and mozzarella into 1/4 inch thick discs and season with a little black pepper.
  2. Layer 4 of the cucumber slices each with a piece of the mozzarella and a fresh basil leaf.
  3. Top each stack with a small sundried tomato.
  4. Layer each stack with a final cucumber slice and skewer each with a black olive to serve, using a toothpick.
