These rich and creamy avocado boats are loaded with cream cheese and infused with lemon zest and aromatic chives.

Topped with a helping of smoked salmon, these make for an indulgent snack when hunger strikes!

Ingredients

  • 2 ounce smoked salmon
  • 2 teaspoon, cut pieces chives
  • 2 teaspoon lemon peel or zest raw
  • 1 ½ tablespoon cream cheese spread
  • 1 each avocado
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the avocado in half, lengthways and remove the stone.
  2. Add the cream cheese, lemon zest and chives to a mixing bowl. Season with salt and pepper and stir well to combine.
  3. Divide the cream cheese mixture evenly between the two avocado halves.
  4. Roughly dice the salmon and scatter over the cream cheese to serve.
