These light and refreshing stuffed cucumbers are loaded with salmon in a zesty avocado mayonnaise.

One cucumber cup makes a great snack in between meals, or you can enjoy two halves served as a lunch portion.

Ingredients

  • ½ large – 8 1/4" long cucumber
  • 2 ounce canned salmon
  • ½ tablespoon mayonnaise
  • ½ each avocado
  • 1 tablespoon dill weed, fresh
  • 1 teaspoon lemon juice, fresh
  • ¼ teaspoon salt, sea salt

Instructions

  1. Slice the cucumber into 4 even segments. Taking a sharp knife score around the center of the cucumber and scoop out the seeds, being careful not to cut all the way through the cucumber.
  2. Add the avocado, mayonnaise, dill, lemon juice, salmon, salt and pepper to a mixing bowl. Mash together to combine, forming a chunky paste.
  3. To serve, divide the salmon mixture evenly between the hollow cucumber cups.
