Salsa is a simple and easy snack! The traditional diced tomatoes in salsa were replaced with a triad of colorful bell peppers for ketogenic diets in this recipe. A spicy jalapeno, a load of lime juice, and fresh cilantro complete the salsa. Enjoy this snack with Carb Manager Tostadas, Cheese Crackers, or Bacon Chips!

Ingredients

  • 6 ounce sweet mini peppers by tesco
  • 1 large – approx 4" – 6" long jalapeno peppers
  • 1 clove garlic
  • 2 tablespoon, chopped cilantro
  • 0.12 teaspoon salt
  • 1 lime yields lime juice raw

Instructions

  1. Prepare the bell pepper, jalapeno, garlic, and cilantro. Chop all the ingredients into a very small dice (like you would see for a traditional salsa). For the bell pepper, choose a variety of red, yellow, and orange colors for a pretty looking snack.
  2. Combine all of the ingredients listed in a bowl. You can serve immediately, or you can let the salsa marinate overnight in a refrigerator. The peppers will soften, some liquid will collect in the bowl, and the flavors will marry.
