Are you a sushi lover, but not interested in the effort of making your own keto sushi? Tuna poke is your answer! This snack-sized version is little bites of tuna poke with avocado and cucumber. At your discretion, you can garnish with sesame seeds and roasted seaweed strips!

Ingredients

  • 3 ½ ounce tuna, raw
  • 1 teaspoon soy sauce
  • 1 teaspoon lime juice, fresh
  • ½ teaspoon, whole pieces sesame seeds
  • ¼ teaspoon ginger
  • 2 ¾ ounce cucumber
  • 1 ½ ounce avocado

Instructions

  1. Chop the tuna into 9 bite-sized pieces. In a ziploc bag, mix the tuna with the soy sauce, lime juice, sesame seeds, and ginger. Spread the tuna around until it’s completely coated in the marinade. Seal the bag and marinate in your refrigerator for 2 hours.
  2. When it’s time to arrange the bites, slice the cucumber into 9, ¼-inch thick slices. Dice about ¼ of an avocado into 9 pieces, and arrange them in the center of each cucumber slice.
  3. Use a toothpick to stick through 1 piece of tuna, then through an avocado and cucumber stack. Do this with 8 more toothpicks.
  4. Serve cold, to be eaten immediately.
