- 1 cup heavy cream
- 2 package stevia leaf noncaloric sweetener (green packet)
- 4 ounce cream cheese

- ¼ teaspoon vanilla extract
Instructions
- In a stand mixer, whip together the heavy cream and first amount of stevia until you have a stiff whipped cream – about 2-3 minutes. Keep an eye on this first step to avoid turning your whipped cream into sweet butter! When done, set the whipped cream aside in a new bowl.
- Quickly wipe your mixing bowl clean and return it to your stand mixer with a paddle attachment. Mix together the cream cheese, second amount of stevia, and vanilla extract on a high speed. Continue mixing the cream cheese on high until it is totally smooth, free of lumps, and light and airy – almost as light as the whipped cream. This can take up to 5-10 minutes, while occasionally scraping the cream cheese back together off the paddle and sides of the bowl.
- Once the cream cheese is light and fluffy, mix HALF the whipped cream into the cream cheese on a very low speed. Then, use a spatula to fold the remaining whipped cream by hand into the cheesecake fluff. Enjoy immediately!
